
A Victory for Chocolate Lovers and Healthy Eaters

I remember it clearly because it was a fast-day. I was watching an episode of Sex and the City, and Miranda was in one of her “dryspells,” desperate for chocolate to fulfill her craving. I watched her pull out a box of Dunken Hines chocolate cake mix and a can of chocolate frosting and I thought, there has to be a healthier way.
I found one while looking through chocolate cake recipes online, adding on “sugar free” and “whole wheat” to the search-box of the search-engine. I thought it may not have been done, but finally after several recipes I found an excellent chocolate cake with chocolate frosting without the margarine, white flour, and processed sugar of Dunkin Hines.
Chocolate Cake with Chocolate Frosting
Cake:
1 cup Whole Wheat flour
1/3 cup unsweetened cocoa powder
¾ tsp baking powder
¾ tsp baking soda
½ tsp salt
2/3 cup Agave
1 egg
½ cup soymilk
¼ cup vegetable oil
1 tsp vanilla
½ cup boiling water
Mix dry ingredients, then add wet ingredients.
Bake at 350 degrees for 30-35 minutes.
Cool, then frost!
Frosting:
¾ cup cocoa powder
¼ cup coconut oil
½ cup agave nectar
2 tsp vanilla
Melt coconut oil for easy mixing.
Whisk ingredients together, Frost your cake!
Now, sit back with an episode of Sex and the City and enjoy a slightly less guilty piece of cake!
